MOLLIE Aspen is thrilled to announce the upcoming debut of Petit Trois at MOLLIE Aspen, the acclaimed French bistro from celebrated Chef Ludo Lefebvre. Set to open its first location outside of Los Angeles December 11 2025, Petit Trois will bring its timeless Parisian charm and classic French cuisine to the heart of Aspen.
In Aspen, Petit Trois will offer breakfast, lunch and dinner service in its full-service dining room, lounge and bar. The menu will stay true to the restaurant’s core, featuring a blend of bistro classics and modern dishes crafted with locally sourced ingredients.
The experience is complemented by an extensive wine list curated by Chef Ludo’s partners, Master Sommeliers Dustin Wilson and Sabato Sagaria. They have created a list with an emphasis on French and California wines, featuring an impressive by-the-glass selection from top producers.
Led by French-born Chef Ludo Lefebvre, Petit Trois is renowned for signature dishes like Steak Frites, Burgundy Escargots, and the legendary Big Mec burger. Known for his bold creativity and meticulous technique, Chef Ludo is a celebrated culinary figure with accolades including a MICHELIN Star, Relais & Châteaux’s World’s 50 Greatest Chefs, and multiple James Beard Award nominations.
