After gaining experience in the corporate culinary world and consulting, he made his way to Colorado, starting in the quaint town of La Veta before settling in Denver. Chef Hayes is deeply committed to the art of preservation, mastering techniques such as fermentation, curing, and pickling, all while maintaining a focus on sourcing the finest ingredients. A staunch advocate for sustainability, he proudly champions 100% sustainable seafood and high-integrity programs like the Never-Ever program. Now in Aspen, Chef Hayes continues to honor his commitment to sustainability and preservation, crafting dishes with the utmost respect for ingredients and delivering unforgettable dining experiences.
