MOLLIE Welcomes Petit Trois
MOLLIE Aspen proudly welcomes Petit Trois, Chef Ludo Lefebvre’s award-winning bistro as its new culinary destination. Petit Trois opened its doors inside MOLLIE Aspen on December 11, 2025, its first location outside of Los Angeles.
Petit Trois L’Original, founded by Chef Ludo Lefebvre, opened in 2014. Inspired by classic Parisian bistros, Petit Trois brings a true taste of France to every plate. A Burgundy native Chef Ludo brings his signature flair to classic French dishes, using top-tier ingredients, and turning simple classics into something opulent without being overstated. The menus draw inspiration from the same aesthetic anchors found throughout MOLLIE Aspen’s stunning design: familiar yet elevated, comfortable and still soulful. Fan favorites include the Burgundy Escargots, the Omelette Petit Trois, a melt in your mouth soft omelette filled with boursin cheese, and the Big Mec, voted Best Burger in America in 2016.
Chef Ludo is one of the last of his generation of classically trained French chefs that learned at the hands of French cuisine legends like Alain Passard, Marc Meaneau, Pierre Gagnaire, and Guy Martin. He’s been recognized as one of the “World’s 50 Greatest Chefs” by Relais & Chateaux and was a multi-time James Beard Award finalist, and was honored by France with the Chevalier de Arts des Lettres award.
Chef Ludo’s menu is complemented by a beverage program that features elegant and complex cocktails, well curated wines, and a thoughtful selection of beers and ciders. Master Sommeliers, Dustin Wilson and Sabato Sagaria, provide personalized pairing recommendations from our impressive wine list that focuses on top French and Californian producers.

The full-service dining room serves daily breakfast and dinner, while offering year-round outdoor heated seating
The hotel’s all-day cafe and bar, located in the lobby, offers a selection of prepared breakfast and pastry options and a special lunch menu from Petit Trois. In the afternoon, the cafe transitions into a wine bar, offering wine by the glass and craft cocktails.
